Sundays are the perfect day for crockpot meals. Sometimes I am in the mood to make a complicated dinner with several moving parts. Then some Sundays all I want to do is toss random ingredients into the crockpot, cross my fingers, and hope for the best. This recipe was born out of one of those Sundays LOL.
I have been super busy at work with my day job, and this past Sunday my husband and I volunteered at our church coffee shop which is super fun but require a 6am wake up call. So needless to say I did not have big plans for dinner on Sunday. I was so pleasantly surprised with how easy and delicious this meal turned out! My husband turned his into a burrito (of course) but I ate mine as a bowl, with copious amounts of tortilla chips on the side.
This recipe is great for a weeknight meal as well. I love that this recipe is packed full of veggies as well. Try this out the next time you need a break from the kitchen!

How To Make Fiesta Chicken Bowls in the Crockpot
- Prep. Chop onions, jalapenos, and bell peppers.
- Crockpot. Add in chicken to the crockpot. Add in the jarred salsa, water, and taco packet seasoning. Stir to combine. Add in chopped veggies and stir again.
- Cook. Cook on low for 4-6 hours, stirring occasionally if possible.
- Check. After chicken is done, remove the chicken and shred. I use two forks to shred mine.
- Assemble bowls. Over white rice, spoon chicken and veggies on top. I use a slotted spoon because I don’t like too much liquid in mine but it is okay if a little broth from the crockpot gets in the bowl. Add all of your favorite toppings! I used black beans, guacamole, shredded monterey jack cheese, sour cream, red onion, cilantro, and hot sauce. Enjoy!
