Ingredients

  • 2 lbs chicken thighs or breast
  • 2-3 bell peppers sliced into strips
  • 1 onion diced
  • 1 jalapeno diced
  • 16 oz jarred salsa
  • ½-1 cup water
  • 1 taco seasoning packet
  • rice for serving
Toppings
  • 2 cans black beans
  • Guacamole
  • Sour cream
  • Monterey jack cheese shredded
  • Red onion diced
  • Cilantro

Equipment

  • 1 slow cooker

Method

  1. First, prep all of your veggies that are needed.
  2. Add in chicken to the crockpot. Add in the jarred salsa, water, and taco packet seasoning. Stir to combine. Add in chopped veggies and stir again.
  3. Cook on low for 4-6 hours, stirring occasionally if possible.
  4. After chicken is done, remove the chicken and shred. I use two forks to shred mine.
  5. Over white rice, spoon chicken and veggies on top. I use a slotted spoon because I don't like too much liquid in mine but it is okay if a little broth from the crockpot gets in the bowl. Add all of your favorite toppings! I used black beans, guacamole, shredded monterey jack cheese, sour cream, red onion, cilantro, and hot sauce. Enjoy!
