Walking Taco Bowls

Here in the Carolinas there is a staple fast food restaurant called Cookout. It truly changed our lives when we first moved up this way from FL. Cookout is hard to explain, it has burgers, hot dogs, corn dogs, milkshakes, and walking tacos. A typical walking taco from cookout comes in a Doritos bag, topped with meat, cheese, sour cream, and your favorite toppings!

I turned the “walking taco” idea into a full meal and with a “healthier” twist. The taco meat is served over a bed of rice, and the toppings are all up to you! I love fresh tomatoes, black olives, red onion, and cheese. Instead of just plopping sour cream on top I like to make a creamy salsa drizzle that makes the whole bowl so creamy and delicious!

This is a great game day dinner idea to switch up a boring old taco bar! You could also serve Fritos as another option, or get crazy with the Doritos flavors like cool ranch or sweet spicy chili! The great thing about these bowls is that they are customizable and anyone can add whatever toppings their hearts desire! Enjoy!

How To Make Walking Taco Bowls

  1. Rice. Get the rice going as this takes the longest. Cook your favorite rice per package directions.
  2. Ground beef. Next, brown the ground beef over medium high heat in a skillet. Cook per directions on the back of the taco packet!
  3. Toppings. Now we prep all of the toppings while the taco meat and rice is cooking! Dice or chop whatever toppings you are going to use! For the creamy salsa drizzle, combine sour cream, salsa, cumin, and a few dashes of your favorite hot sauce. A squeeze of lime juice in this is also great!
  4. Assemble. Once the rice is done and meat is cooked we can assemble our bowls! Start with a bed of rice, scoop some meat on top. Add all of your favorite toppings and drizzle with the creamy salsa! Top with PLENTY of crushed Doritos. Enjoy!
