Summer is officially here so that means it is time for grilling chicken and eating fresh fruits and veggies as much as possible. My husband and I went to Jamaica for our honeymoon, where we were both introduced to jerk chicken. We would get a jerk chicken quesadilla every day and dip it in salsa and guacamole which was so good. We went to the resort gift shop and found a jerk paste that we bought and brought home and the grilled chicken turned out amazing! I found the same brand in my local store in the international aisle so now this jerk grilled chicken is a summer staple for us! Here is the link to the jerk paste I love: jerk seasoning.
To make the jerk chicken pop even more, I love to serve it in a rice bowl with my favorite mango salsa. I add black beans, guacamole, and fresh tomatoes as well. Squeeze a fresh lime over everything and you will love every bite! This is healthy and so delicious. I just made this recipe for dinner this week and I am already craving it again. It makes 4 servings, so the next day for leftovers it is so easy to assemble your bowl which is perfect for a weeknight!
The Lord is my strength and my shield; in him my heart trusts, and I am helped; my heart exults, and with my song I give thanks to Him. Psalm 28:7

Why You’ll Love These Jerk Chicken Bowls

How to Make These Jerk Chicken Rice Bowls
Please see recipe card at the bottom of this post for the full recipe details.
- Marinate. The jerk seasoning instructs to marinate the chicken for at least an hour, up to 4 with the rub. I forgot and only marinated for about 2 hours, but it was plenty of time to get that flavor soaked in. I dropped my thighs into a Ziploc bag and rubbed the paste in so every piece had a good amount of paste.
- Salsa. I think the salsa is best if it sits for an hour or two so the flavors get to know each other. Here is the link to my mango salsa recipe!
- Grill. This chicken really is best grilled. I sprinkled a little bit of salt on the chicken before grilling but that is all I did as far as seasoning goes. Grill your chicken until internal temp is 165 degrees Farenheit. You can also bake the chicken if you do not have access to a grill, just cook like usual until internal temp is 165 degrees Farenheit.
- Rice. While the chicken is grilling have your rice cooking. I cooked jasmine rice per package instructions.
- Assembly. Scoop rice into your bowl and top with chicken. Then add a big scoop of black beans (I heated mine in the microwave) seasoned with some salt and pepper. Add a healthy scoop of guacamole, mango salsa, and some diced Roma tomatoes. Top with the juice of half of a lime and eat with more guacamole and tortilla chips on the side. Enjoy!

Jerk Chicken Rice Bowls with Mango Salsa
Ingredients
Method
- First we need to marinate the chicken.
- I think the salsa is best if it sits for an hour or two so the flavors get to know each other. See the top of my post for a link to my my favorite mango salsa. This is the star of the show for this recipe!
- Next, grill the chicken.
- While the chicken is cooking, cook your jasmine rice. I cooked 1 cup of uncooked rice per package directions and it made plenty of rice for this recipe.
- Time to assemble! Heat up your black beans so they are ready to assemble once the chicken is done. Add a scoop of rice to your bowl, and a scoop of black beans. Top with the grilled chicken, a healthy amount of mango salsa, and a spoonful of guacamole. Add the fresh Roma tomatoes and juice of half a lime squeezed on top. Enjoy and try to keep yourself from making the recipe every week of the summer!
