Happy July everyone! Hope you all had a great long weekend, I enjoyed some time at the lake with family and it was so nice. My husband has always been known for his goat cheese/pepper jelly hamburgers and they are a staple for our 4th of July cookouts every year. This year we decided to give it an elevated spin, and tried this version where everything is wrapped in puff pastry.
I was a little skeptical when attempting this recipe because I didn’t know if the pepper jelly would burst out of the puff pastry. It does leak a little towards the end of cooking, but I was so pleasantly surprised by how flaky and delicious the puff pastry stayed! The combination of goat cheese and pepper jelly cannot be topped in my opinion. The creamy goat cheese pairs so well with the sweet heat of the pepper jelly.
If you are looking for a way to impress your guests, or just spice of a regular burger, give these a try! My husband and I both kept saying “mmmm” the whole time we were eating those, and that is how I know a recipe is a winner! Give these a try and let me know how you like them in the comments of this recipe!

How To Make Sweet Heat Goat Cheese Burger Bundles
- Thaw. Check the package directions for your puff pastry, and thaw ahead of time. I set mine out 40 minutes before cooking.
- Burger. Time to patty the burgers! Buy about a quarter pound of meat per burger bundle. I bought 1.25 lbs because that is the package size that my grocery store had. I measured out all of my patties using my kitchen scale to make sure they were all the same size. Patty out 2 small burgers per bundle. So for this recipe we are making 8 patties, the bundles will be double burgers. Season with season salt and pepper.
- Goat cheese. Add in the goat cheese into a bowl, and sprinkle in 1/2 tsp of dried thyme, or fresh if you have it. Using a whisk or a spoon, whisk in 1/4 cup of heavy whipping cream. Whisk until the goat cheese is nice and creamy. Set aside.
- Onion. Slice the red onion thinly and prepare the arugula by washing and drying it. Set aside.
- Pastry. Time to roll out the pastry. Mine came with two separate sheets. I cut each sheet in half to make 4 pieces of pastry, one for each bundle. On a floured surface roll out each piece into a circular shape if possible. Don’t roll too thin or it won’t hold up in the oven. Tip: use a small bowl around the size of your burger patty and place in the middle to get an idea of how big the pastry should be. This will depend on how big you made your burger patties. Once the four sheets are rolled out into the shape you want, set aside in the fridge while we make the burgers.
- Preheat. Preheat oven to 400 degrees farenheit. Prepare large baking sheet with parchment paper.
- Cook. Over medium-high heat, drizzle a tablespoon of avocado oil into a large skillet. Once the oil is hot add in two patties and smash them down. Cook for a few minutes on each side until browned and cooked through. Repeat on all patties and set cooked burgers to the side.
- Assemble. Time to assemble! Lay down the first pastry sheet. Add one burger patty to the middle. Layer a generous amount of goat cheese. Next, add one 1/8 cup of pepper jelly on top of the goat cheese. Sprinkle a few red onion slices, and few pieces of arugula. Top with the next burger patty. Grab the edge of the pastry and begin to seal of the bundle, until all of the pastry is folded onto itself and the burger is sealed. I sealed mine pretty tightly to prevent leaking. Flip over and place on the baking sheet. Repeat with the other 3 bundles. I did have some goat cheese leftover, save this for dipping later!
- Egg wash. Beat one egg and brush the egg over the tops of each bundle. Sprinkle with sesame seeds.
- Bake. Bake these for 15-20 minutes until the top is golden brown. I checked the bottom of mine by lifting up with a spatula to make sure they were done, no one wants uncooked pastry!
- Serve. Once golden brown and crispy, remove and serve immediately. I used any leftover goat cheese mixture and a dollop of pepper jelly from earlier to dip mine in for extra goat cheese jelly goodness. Enjoy!
