Pizza Zucchini Boats

This recipe was bred out of necessity. I don’t find the “healthier” recipes to be as fun as some of my other recipes. We all know I love a complicated recipe. However, I do love a quick weeknight healthy meal sometimes, and this one is so good!

This comes together in less than 15 minutes and it is also so customizable. For this recipe I did classic pepperoni, but feel free to get creative and use whatever toppings you want! (Except pineapple…..yep I said it). This recipe is also keto-friendly so it is great for when you need a good reset. I actually left dinner feeling full from these, which usually does not happen for me when I try to make a “healthy dinner”. What can I say, I love carbs.

Why You Should Make Pizza Zucchini Boats

  • Easy. This is so easy and takes no effort.
  • Customizable. Add your favorite toppings! I chose banana peppers.
  • Low Carbs. Perfect if you are trying to “do good” during the week like me!

Here’s what you’ll need:

  • Zucchini – to make the boats
  • Marinara Sauce – to fill the boats
  • Mozzarella – I love sliced fresh mozzarella for this
  • Pepperoni – to cover your boats and make it “pizza” style
  • Italians seasoning – for extra flavor!

Zucchini Boat Tips

  • Try to choose zucchinis that are similar in size so they cook evenly and around the same amount of time.
  • Get creative! Try any topping you love on pizza. I am already envisioning Italian sausage crumbles, green peppers, and black olives!

How To Make Pizza Zucchini Boats

  1. Prep. Preheat the oven to 375 degrees Farenheit. Prepare a casserole dish with aluminum foil and set aside. Next, prep the zucchini. Cut them all in half lengthwise, then using a small spoon hollow out the middle. This should be relatively easy to remove, then discard of the “zucchini guts” as I like to call them.
  2. Season. Sprinkle the hollowed boats with salt, pepper, and italian seasoning.
  3. Fill. Next spread marinara sauce to fill up the boats. The amount of marinara will depend on how big your zucchini’s are, just use your best judgement!
  4. Cheese. Top with sliced mozzarella, and plenty of pepperoni. Feel free to add lots of pepperoni!!
  5. Bake. Bake for 15-20 minutes. I love my cheese nice and melty so I did broil mine for 1-2 minutes at the end just to get a nice bubbly top. Stick a knife into the zucchini to make sure it is tender.
  6. Serve. Remove from the oven and serve! Enjoy!

Recipe Variations

  • White pizza version. Stuff with ricotta instead of marinara, yum!
  • Shredded cheese. Use shredded mozzarella if preferred.
  • Toppings. Get crazy and use whatever toppings you love! (except pineapple guys…that does not belong on pizza)
