I have been making fun of my mom lately because every time I talk to her she says “I am locking in” with what I am eating. It seems like every Monday she is “locking” back in….so who knows what she is doing on the weekends. I found myself needing to “lock back in” after going to Kentucky this weekend for my husband’s family reunion. Let’s just say a trip to Buc-ee’s there and back and various dessert options, I needed a reset.
When I used to live in Greenville, SC there was a restaurant called CoreLife Eatery . This was a staple for me when eating out because it was fast, but still healthy. They had a buffalo chicken bowl that me and my husband were OBSESSED with. After out trip I was craving it, but no longer have access to CoreLife, so I decided to recreate that bowl, thus this recipe was born. The main thing I loved about CoreLife was this purple rice that is so delicious, I am not sure why I waited so long to try and make it at home! Here is the link to the purple rice I used.
This is perfect for a weekly meal prep. I used the Primary Kitchen buffalo sauce for this recipe and it was AMAZING. I love that it is made with avocado oil, check out there other sauces as well if you are trying to avoid seed oils!

How To Make Healthy Buffalo Chicken Bowls
- Chicken. Cook your chicken however you prefer. I always find grilling tastes amazing and yields juicy chicken. But if you are on a time crunch feel free to use rotisserie chicken, bake your chicken, or however you like to cook it! I grilled mine and then tossed it in buffalo sauce after cooking.
- Rice. Cook the rice per package directions. I did 1 cup of purple rice. Feel free to use any rice you like for this recipe!
- Prep. While the chicken and rice is cooking, prep all of your toppings. Slice the tomatoes, chop the cilantro, shred the cheese, drain and rinse the beans and corn. I like to heat my black beans in the microwave right before serving.
- Assemble. When the chicken is done, slice and toss the chicken in buffalo sauce. To a bowl add in cooked rice, top with chicken, tomatoes, corn, black beans, and cilantro. Add on fresh cheddar cheese, blue cheese crumbles, and a generous drizzle of ranch dressing and more buffalo sauce if needed. Enjoy!
