The second I saw the viral Trader Joe’s dumpling bake online; I couldn’t stop thinking about it. I don’t know how it is possible to crave something you have never tasted, but my mouth was literally watering just thinking about it!
Luckily for Valentine’s Day this year my husband and I took a trip to Trader Joe’s to get steaks and the chocolate chip cookie sandwiches (if you haven’t tried these yet you need to). While there, I was able to snag everything I needed, and of course a cart full of other things that caught my eye. If you have seen any of my recipes before, you know I like to “spice” things up. If the recipe is a simple one pan meal, I do like to try and add extra flavor or vegetables to make things more interesting.
This recipe comes together super quick, but my version does require some chopping. In my opinion it is worth it, please try this one out!

How to Make the Dumpling Bake
Please see recipe card at the bottom of this post for the full recipe details.
- Preheat oven to 375°F. Prep the veggies. Dice the onion, bell pepper, and mince your garlic.
- Assemble the dumpling bake. In a large casserole dish, add coconut milk, red curry sauce, soyaki, and water. Whisk well then add in the prepped vegetables.
- Add the spinach. Toss this and cover in the sauce as well. Nestle the dumplings into the sauce, seam side up. Cover with aluminum foil and place in the oven.
- Bake. For 35-40 minutes until the dumplings are cooked all the way through. Prep your jasmine rice while the dumplings bake if you are serving with rice like I did!
- Dish up! Serve over rice, garnish with green onion and chili oil. Also a side of egg rolls is a must for me!

Method
- Preheat oven to 375℉.
- In a large casserole dish, add coconut milk, red curry sauce, soyaki, and water. Whisk well to combine into a smooth sauce. Add diced onion, minced garlic, and diced bell pepper. Stir again!
- Add the spinach, feel free to chop the spinach a bit if you prefer, toss this in the sauce. Now nestle each dumpling into the sauce, seam side up. Make sure they are deep enough in the sauce, so they absorb the deliciousness while baking. Cover the casserole dish with aluminum foil.
- Bake for 35-45 minutes until the dumplings are cooked all the way through. Garnish with green onion, and chili oil is a must! I served mine along jasmine rice and egg rolls. Enjoy!
