Ingredients

  • 1 13.5 oz canned coconut milk
  • 1 bottle Thai Style Red Curry Sauce from Trader Joes
  • 3 tbsp Soyaki from Trader Joes (or 2 tbsp soy sauce and 2 tbsp honey)
  • ½ cup water
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 yellow bell pepper diced
  • 2 ½ cups baby spinach
  • 1 package Trader Joe's pork gyoza potstickers
  • green onion for garnish
  • chili oil optional

Method

  1. Preheat oven to 375℉.
  2. In a large casserole dish, add coconut milk, red curry sauce, soyaki, and water. Whisk well to combine into a smooth sauce. Add diced onion, minced garlic, and diced bell pepper. Stir again!
  3. Add the spinach, feel free to chop the spinach a bit if you prefer, toss this in the sauce. Now nestle each dumpling into the sauce, seam side up. Make sure they are deep enough in the sauce, so they absorb the deliciousness while baking. Cover the casserole dish with aluminum foil.
  4. Bake for 35-45 minutes until the dumplings are cooked all the way through. Garnish with green onion, and chili oil is a must! I served mine along jasmine rice and egg rolls. Enjoy!
