One thing about me is I love eggs. I know some people hate them, but I eat them every day. Most days you can find me boiling 2 eggs, eating a Persian cucumber, and some fruit for lunch. Whenever I go on vacation I don’t get to eat my usual egg quota and I actually start craving them, I know I am weird.
I do get burned out on just plain boiled eggs so when I feel like mixing things up this is my go-to. This is delicious on it’s own, dipped with a cracker, or as a sandwich on sourdough bread. You can’t even taste the cottage cheese in this but it adds protein and makes the egg salad super creamy. This is perfect to prep a few servings and keep in the fridge for lunches.

How to Make This Egg Salad
Please see recipe card at the bottom of this post for the full recipe details.
- Boil. To start we need to boil the eggs. Bring a small pot of water to a boil and carefully place eggs in the pot. Boil for 10-11 minutes then remove. Set into a bowl of ice water and set in the fridge to cool for a few minutes.
- Veggies. While the eggs are cooling, chop the celery and green onions.
- Assemble. In a mixing bowl mix together the cottage cheese, celery, green onion, mustard, celery salt, and relish. Peel the eggs and chop them into small pieces, this does not have to be precise. Add the chopped eggs into the cottage cheese mix.
- Taste. Taste and add more salt or pepper as needed. I added some cayenne to give mine a kick because I love spice in everything.
- Serve. Serve with crackers or as an egg salad sandwich on your favorite bread. Enjoy!
