Caesar Inspired Dense Bean Salad

Spring and summer, means lots of dense bean salads on rotation! I love prepping a dense bean salad at the beginning of the week, then eating it all week long. It is filling, protein and fiber packed, and delicious! This one does have some mayonnaise, so it is definitely more indulgent than my Chipotle Lime Dense Bean Salad, but it is so delicious that you won’t blink an eye.

This dense bean salad has everything I love inside. White beans, cucumber, red onion, parmesan cheese, and garlic. Mix that together and you have a caesar salad inspired dense bean salad. I think this would also be so good on a piece of sourdough bread that has been toasted, just an idea!

My biggest tip for this one is to make sure that your beans are rinsed well, and have a few minutes to drain before adding them to the bowl. No one wants a super wet dense bean salad, otherwise the dressing will get loose and won’t be as creamy!

How to Make This Dense Bean Salad

Please see recipe card at the bottom of this post for the full recipe details.

  1. Drain the beans. I don’t like wet dense bean salad, so I like to rinse and then drain my beans in a strainer while I prep the other ingredients.
  2. Chop the veggies. Slice up the cucumber, dice the onion, and celery. You can also mince your garlic and chop the dill for the dressing at this point too.
  3. Make the dressing. In a bowl, mix the mayonnaise, lemon juice, capers, garlic, worcestershire sauce, fresh dill, parmesan cheese, red pepper flakes, lemon pepper, and salt. Whisk well until creamy. Feel free to adjust any seasonings if you need to!
  4. Mix it up! Add the drained beans and vegetables into a large bowl. Add in the dressing and stir until everything is coated. Enjoy!
