Walking Taco Bowls

This is a great game day dinner idea to switch up a boring old taco bar! You could also serve Fritos as another option, or get crazy with the Doritos flavors like cool ranch or sweet spicy chili! The great thing about these bowls is that they are customizable and anyone can add whatever toppings their hearts desire!

Course: Dinner

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup white rice (uncooked)
  • 1 cup black olives sliced
  • ½ red onion diced
  • 1 cup diced tomatoes
  • guacamole for topping, I used storebought
  • 8 oz freshly grated cheddar cheese
  • 1 bag Doritos crushed on top
Creamy Salsa Drizzle
  • ¾ cup sour cream or full fat greek yogurt
  • ¾ cup cantina style salsa
  • 1 tsp cumin
  • ½ lime juiced, optional

Method

  1. To start, get the rice going as this takes the longest. Cook your favorite rice per package directions.
  2. Next, brown the ground beef over medium high heat in a skillet. Cook per directions on the back of the taco packet!
  3. Now we prep all of the toppings while the taco meat and rice is cooking! Dice or chop whatever toppings you are going to use! For the creamy salsa drizzle, combine sour cream, salsa, cumin, and a few dashes of your favorite hot sauce. A squeeze of lime juice in this is also great!
  4. Once the rice is done and meat is cooked we can assemble our bowls! Start with a bed of rice, scoop some meat on top. Add all of your favorite toppings and drizzle with the creamy salsa! Top with PLENTY of crushed Doritos. Enjoy!
