Hot Honey Prosciutto and Brie Grilled Cheese

No one can deny that a grilled cheese is one of the most perfect food creations to ever exist. I am not above a good ole’ white bread with kraft singles grilled cheese. But in the spirit of creative cooking, why not elevate the classic grilled cheese with arguably the most “adult” cheese there is? Enter, my hot honey prosciutto and brie grilled cheese.

As a kid I always thought brie cheese was for fancy adults who drink wine and work a corporate 9-5 job. It is so funny to think about my little kid brain associating brie cheese with corporate America, but hey I am and always have been a bit weird.

This recipe is so quick and easy to make but is elevated at the same time. Brie is one of my favorite cheese and it goes oh so well with prosciutto. Drizzle some hot honey and voila you have a perfect grilled cheese in my opinion. Of course no grilled cheese is complete without dipping in tomato soup! I used store-bought to make my life easier, but if you really want the full experience definitely opt for homemade tomato soup. I will have a recipe coming for you this fall with my favorite tomato soup so be on the lookout for that!

As always, thank you for checking out the blog. Tell me what you think of this grilled cheese in the comments below!

Why You Should Make This Brie Grilled Cheese

  • Quick. This takes mere minutes to throw together.
  • Creamy. Nothing hits quite like ooey gooey brie that is melting over a piece of perfectly toasted bread.
  • Sweet and Spicy. Hot honey is the perfect addition. It balances out the richness of the brie and prosciutto.

Here’s what you’ll need:

  • Brie – I like a lot of brie on my grilled cheese
  • Bread – whatever bread you like for grilled cheese!
  • Prosciutto – the perfect addition to this sweet and savory sandwich
  • Hot Honey – for drizzling. If you don’t like spice, use plain honey here!
  • Italian Seasoning – I like to dash just a little bit on my brie before toasting

Grilled Cheese Tips

  • Low and slow. Set your stove to low-medium heat. We want to give the cheese time to melt before the bread gets too crispy.
  • Mayo vs. Butter. Feel free to coat the outer layer of bread in butter or mayo. It is up to you, both will yield a delicious grilled cheese.

How To Make Hot Honey Prosciutto and Brie Grilled Cheese

  1. Prep. Start by prepping the brie. There is an outer casing on brie cheese which is edible and totally fine to leave on. If you want to remove it, feel free. My husband doesn’t like the casing so I just take a small knife and “shave” the outer layer off, being careful not to slice off too much cheese in the process! (you can even use a vegetable peeler on the outer edge). Once the brie is ready, slice it to your preferred thickness and set aside.
  2. Assemble. I like to have all of my sandwiches prepped before I move to the stove. To assemble, add a layer of mayo to the bottom piece of bread (trust me). Add on a layer of brie cheese covering the whole bottom piece of bread. Sprinkle a bit of italian seasoning onto the brie. Next pile on the prosciutto. Drizzle with hot honey and top with the second piece of bread.
  3. Toast. Time to “grill’ your cheese! Heat a large pan over low-medium heat. I used butter as my toasting agent, but you can use mayo here if you like. Mayo method: Spread a generous layer on the bottom piece of bread and place directly into the pan. Add mayo to the top side once in the pan. Butter method: Melt a few tablespoons of butter into the pan and place sandwich directly into melted butter. You may need to add a little more butter after you flip. Toast your sandwich for a few minutes on each side until your preferred doneness. I put a lid on my skillet to help with melting the cheese.
  4. Serve! Once the sandwich is toasted to perfection, serve up with a bowl of hot tomato soup. Enjoy!

Recipe Variations

  • Apple or Pear. I am so tempted to make this again and add some thinly sliced apple or pear onto my grilled cheese.
  • Regular honey. If you don’t like hot honey, use regular honey!
  • Mustard. I think a spread of stone ground mustard would be delightful!
