Course: Side Dish

Ingredients

  • 3 lbs Yukon gold potatoes
  • ¾ cup whole milk/half and half
  • 1 stick salted butter
  • 3 cloves garlic minced
  • salt and pepper to taste

Equipment

  • 1 Stand Mixer or hand mixer

Method

  1. First, peel all your potatoes. After they are peeled, I like to cut mine into 2-inch chunks. You want your pieces to be the same size, so they cook uniformly. Place your potatoes and cover them in water. I don’t measure the water; I just eyeball it until I know all potatoes are covered and none are peeking over the surface of the water.
  2. Place pot on the stove over high heat and bring to a boil. Boil potatoes for 15-20 minutes until fork tender, stirring occasionally.
  3. Next, strain the potatoes over the sink, and place potatoes into your Kitchen Aid mixing bowl. This can also be done with a hand mixer if you do not have a stand mixer.
  4. Add the whisk attachment to your stand mixer. Mix the potatoes on medium speed for 3-4 minutes until they are completely smooth until you add anything to them. We want these hot potatoes nice and whipped! Next, melt your stick of butter. Melt it right before you add it so the butter is hot when it is added. Turn on the mixer and stream the butter in slowly. Make sure to scrape the sides of your bowl as you go to make sure everything is mixed in. Do the same thing with your half and half. Heat the half and half for 20-30 seconds in the microwave until hot and stream this in as well. Next, add in the garlic and salt and pepper to taste. If you like sour cream in your mashed potatoes, add that in at this point!
  5. Serve immediately topped with chives. Enjoy!
