Servings: 4 -5 Burritos
Course: Dinner

Ingredients

  • 1½ lbs chicken thighs
  • 1 bag frozen tater tots
  • 4 oz cream cheese softened
  • ⅓ cup sour cream
  • 1 oz ranch seasoning packet
  • ½ cup buffalo sauce plus more for drizzling
  • 10 oz cherry tomatoes halved
  • 2 green onions diced
  • large tortillas one per burrito
  • 4 oz blue cheese crumbles
  • 8 oz shredded cheddar cheese

Method

  1. To get started go ahead and prep the tater tots. These will take a while because we want them nice and crispy when they go into the burrito. Cook per package directions.
  2. To a mixing bowl add in the softened cream cheese, sour cream, and ranch packet. Mix together until combined and is a smooth mixture. Set aside.
  3. I used chicken thighs and pan fried them. I seasoned with Tony's cajun seasoning, and some paprika. Feel free to do whatever seasoning you like. You can grill the chicken, bake it, or buy rotisserie and make your life easy! Once the chicken is cooked, chop it up and toss in buffalo sauce. Set aside until ready to assemble.
  4. Once the tots are done we can assemble the burritos! Lay a large tortilla flat on a plate. In a bowl add in the portion of chicken for one burrito. Use your best judgement here. Add in 2 or so tablespoons of cream cheese. Add in a healthy handful of cheddar cheese, and blue cheese. Mix this all up to make a buffalo chicken/cream cheese mixture. Drizzle extra buffalo sauce and ranch dressing per your preference. Place tater tots on the tortilla first, about 8-9 tots. Add the chicken mixture on top. Top with tomatoes and green onions. Roll it up!
  5. If you want to do a "grilled cheese burrito" style, preheat a large skillet over medium heat. Spray with non-stick spray. Sprinkle with a little bit of cheese in a vertical direction (the same direction you will be placing the burrito if that makes sense). Let the cheese melt for a few seconds then lay the top side of the burrito down (seam side up) and let the cheese toast onto the burrito. Once the cheese starts to brown around the edges flip and toast the bottom side.
  6. If you don't want the extra cheese on the top, simply toast each side of the burrito in a large skillet over medium heat until browned on each side.
  7. Serve with extra ranch. Enjoy!
