Ingredients

  • Salad Base of your choice I used one package of spinach, and mixed it with a package of butter lettuce
  • 1.5-2lbs Cooked chicken I baked chicken thighs
Green Goddess Dressing
  • ½ avocado
  • ½ cup plain greek yogurt
  • ¼ cup mayonnaise
  • 2 cloves garlic
  • heaping ¼ cup green onion roughly chopped
  • ½ cup fresh basil
  • ¼ cup fresh cilantro
  • ¼ cup fresh dill
  • 1 lemon juiced
  • 2 tsp capers
  • ½ tsp pepper or lemon pepper
  • ½ tsp salt
Toppings
  • 4 oz crumbled goat cheese
  • 4 persian cucumbers sliced
  • 2 avocados quarter avo per portion
  • 1 bag Kettle cooked potato chips

Method

  1. Start by prepping the chicken. You can buy rotisserie chicken for this salad if you want an easy option! I opted for baking some chicken thighs, simply seasoned with Cavender's and lemon pepper. Set aside cooked chicken in the fridge to cool while prepping everything else.
  2. To make the dressing start by prepping all of the ingredients. Nothing needs to be super finely chopped since we are tossing it in the blender! To the blender add in the greek yogurt, mayo, whole garlic cloves, green onion, basil, cilantro, half of avocado, dill, lemon juice, capers, and salt and pepper. Blend this up until smooth. Taste and adjust seasonings as needed.
  3. To assemble the salad, start with whatever lettuce/salad base you are using. Top with chicken, sliced cucumbers, diced avocado, goat cheese, and a handful of crushed chips. Drizzle the delicious green goddess dressing on top. Top with fresh cracked pepper and enjoy!
